Make Healthy Meals for Dinner


Getting dinner on the table can be a struggle, which is why it's always valuable to have a couple of make-ahead meals in your arsenal. Both of these recipes freeze and reheat magnificently, so they're the perfect thing to have on hand for a quick, healthier meal on a busy night.

Chicken and Black Bean Burritos

These are just as great as anything you can get at a junk food Mexican restaurant, therefore much healthier. Plus they are the best grab and go meal since you can consume it with one hand if required. If you're really short on time, substitute the homemade chipotle sauce with one cup of your preferred jarred enchilada sauce or salsa.

Ingredients:

  • 1/2 cup tomato sauce
  • 1/4 cup water
  • 1/2 cup cilantro leaves
  • 1/2 tsp. cumin
  • 1/2 tsp. ground coriander
  • 1 chipotle in adobo, plus 1 tsp. adobo sauce (optional).
  • 1 rotisserie chicken, meat got rid of from the bone and shredded.
  • 1 tablespoon. olive oil.
  • 1 small onion, sliced.
  • 1 can black beans (not drained).
  • Salt.
  • 6 huge whole wheat tortillas.
  • 3 cups shredded Mexican blend cheese.
  • 1 avocado, sliced.

Directions:.

Put the tomato sauce, water, cilantro, cumin, ground coriander, and chipotle in a food mill or blender and blend till smooth. Toss with the shredded chicken and reserved. To prepare the beans, heat the olive oil in a medium pan. Add the onions until cook up until softened. Include the black beans with the liquid from the can and cook, stirring periodically, until thickened. Season with salt to taste and mash some however not all the beans. To assemble, heat up the tortillas briefly in a low oven or pan. Put one tortilla on a plate and spray with cheese down the middle. Leading with beans, chicken, and avocado slices. Fold in the sides of the tortilla then roll it up into a tight burrito. Warm up a pan and place the burrito in the pan seam-side down to toast for a minute and seal (this keeps it from breaking down). Serve immediately or permit to cool and refrigerate or freeze.

Makes 6 burritos.

Black Bean Burgers.

These are so great you'll forget that they have no meat. If your household doesn't mind spice, add a chopped chipotle chile in adobo to the mix for included flare. These are especially delicious with sweet potato french fries.

Ingredients:.

  • 1 can black beans, drained pipes and washed.
  • 1/2 cup corn kernels.
  • 1/4 cup chopped cilantro.
  • 1 egg.
  • 1 cup bread crumbs.
  • 1/2 tsp. garlic powder.
  • Salt.
  • 1 tsp. vegetable oil.

Directions:.

Put the black beans, corn, and cilantro in a food processor and pulse a few times. Add the egg, breadcrumbs, and garlic powder and mix together with a wood spoon. Season with salt. Type into 4 patties. Refrigerate for at least 15 minutes or freeze to take pleasure in later. Heat the vegetable oil in a pan over medium heat. Include the burgers and cook about 4 minutes per side, until equally browned.

Makes 4 hamburgers.
